Strawberry Yogurt Pancakes

I have been trying to incorperate some more clean, healthy, sustainable eating into my diet. No diet. No plan. Just trying to be my healthiest self for me, and no one else! I am reading Intuitive Eating by Evelyn Tribole and Elyse Resch and I am really learning a lot from it! I can't wait to share more about it once I get into it a little more :) 

Onto the recipe of the day! Today's recipe is one for that Saturday morning that you really want some pancakes, but you don't want to go out. It has your healthy whole grain carbs, yogurt for probiotics (which, can't hurt any of us with this stinking flu/cold going around!!!!) and protein. I used yogurt as my sweetener instead of syrup and added strawberries on top, because why not!

Strawberry Whole Wheat Pancakes

1/2 C whole wheat flour

1 egg

1 TBSP + 1 tsp coconut sugar

1 tsp (light) olive oil

1/2 C almond milk

1 tsp vanilla extract

dash of cinnamon

 1 container of Siggi's Strawberry Rhubarb Yogurt

1. Mix all dry ingredients (coconut sugar, flour, and cinnamon) together in a bowl

2. Add in the wet ingredients (olive oil, almond milk, vanilla extract and egg) mix until blended. 

3. Add about a 1/4C of batter for each pancake. Flip when edges start to bubble up. 

4. In between each pancake, spread some siggi's yogurt and sliced strawberries. 

5. Enjoy!! :)

***Don't over mix, it will cause really flat pancakes!!!***
