Chicken Cauliflower Fried Rice

This recipe is probably one of my favorites. I have a sweet spot for anything Japanese, Asian, Chinese or related! It is just the best, and it has such a great flavor profile (sweet, umami, salty, all the good stuff ;) ) This one is so good and I thought it was super satisfying. 

Added bonus, my father (who won't eat cauliflower rice... and is pretty much against vegetable replacements of any sort) said he would add this to the "weekly rotations" that they do! So definitely try this out on your non-vegetable-loving kids and husbands!

In this recipe I use coconut aminos, this is a substitute to Soy Sauce, it doesn't contain any soy or gluten... if these don't matter to you, you can always use soy sauce! :) Just make sure to not use any salt... coconut aminos are sweet and it isn't salty like soy sauce. You can also make this with rice if you would rather not venture into the cauliflower rice territory ;) 



Chicken Cauliflower Fried Rice


2 tbsp. avocado oil 

1 tsp ginger, minced

2 cloves of garlic, minced

3 C frozen cauliflower rice 

1 C frozen peas and carrots 

1 small bag of snap peas 

1 lb chicken tenders (or breasts, tenders were on sale so I got those this time!) 

1/4-1/2 C coconut aminos


White pepper 


Chinese 5 Spice


1. Heat a pan on medium-high heat 

2. add avocado oil, minced garlic and minced ginger. 

3. add chicken and cook till done, add coconut aminos, salt and pepper 

4. add snap peas and cook throughly 

5. once snap peas are cooked, add frozen cauliflower rice, peas and carrots. 

6. add the rest of the coconut aminos, Chinese 5 spice, salt, pepper, and basil to taste. 

Eat while hot!! This also saves and reheats really well!!
