Avocado Chicken Salad

Happy Friday Y'all!! 

I have been on spring break this week, and I am so thankful for some relaxation time!!  I took a week off of work as well because I have never taken a full spring break off... I took time for myself, relaxed, worked out as much as I wanted (because time is usually what holds me back from that) got engagement pictures taken, got a couple of vendors booked for the wedding and did some makeup and hair trial runs. It has been a great, busy, relaxing week... but now onto studying for that Chemistry exam I have to take on Monday... D: 

This recipe is unfortunately bringing me back to reality, this is something I make for my lunches that I bring to work when I don't have a lot of time to make something. It is a good combo of fat, protein and carbs (depending on what you eat it with!) and it tastes good too, which is one of the main things that I look for! :) 

P.S. I will normally double this because an avocado sitting out is gross, so I double it because I don't think it's as gross mixed into something, weird quirk, I know... 


Avocado Chicken Salad

1/2 of an avocado

1/2C shredded chicken (rotisserie, canned, leftover from dinner, your choice!) 

2 TBSP diced onion

2TBSP diced celery

1 TBSP mustard

salt/pepper/garlic powder to taste


1. Halve avocado and mash in a bowl

2. Cut onion and celery up

3. add celery, onion, chicken, mustard, salt, pepper, and garlic together

4. Mix well*

5. Serve on top of toast, with crackers, in lettuce cups, the choices are endless! 

* I don't like dry chicken salad, so if it is a small avocado, or for some reason it is more dry than usual, I will sometimes add a little bit of avocado oil mayo, more avocado, or more mustard just to make it not as dry!
