Sausage and Kale Potato Hash

Apparently I have an obsession with breakfast, but that isn't news to anyone who knows me! I promise I will start to make some dinner and lunch recipes soon! But today, I'm sharing one of my favorites. This recipe has kale in it, and I know everyone thinks kale is the big bad green that is so gross, but I promise, if you try it out it's really good!

The only way I can get anyone in my family to eat it is to chop it up REEEEAAAL fine. Try it, and let me know how you like it in the comments, but don't automatically count it out! 



Sausage and Kale Potato Hash

Serves 4 


1. 1 lb of Sausage, preferably without added sugar, but you know how easy that is to find. 

2. 3 cups of kale, finely chopped (seriously makes all the difference!)

3. 4 medium red potatoes, cubed. 

4. (optional) a couple of eggs throw on top is the way I like it! :p 


. brown sausage on medium heat until cooked through. 

2. While sausage is cooking in a separate pan, saute potatoes in ghee, butter or oil of your choice, until browned. 

3. Add sausage and kale at the same time to potatoes.

4. Stir until kale is wilted 

5. enjoy hot! leftovers can be stored for up to 5 days, it keeps really well!!
